Good Friday with even better chocolate chip pancakes!





I used:

1 egg
1/2 cup flour
2 teaspoons baking powder
2 teaspoons vanilla sugar
1 tablespoon sugar
about 1/2 cup milk
some crushed dark chocolate
salt to taste
(made 5 pancakes)

Mix all of this and fry in butter according to taste! I decorated with some syrup and banana.


Risotto with fried halloumi and asparagus







Make a basic risotto with white wine and parmesan and possibly mushrooms. Cut the halloumi into thin slices and fry until golden, fry in a little bit of butter! Cook the asparagus, but watch it! They should still have a slight crunch in the risotto, so don't overcook. Usually about 5 min or so. Cut the cooked asparagus in half and mix them and the halloumi into the risotto. Decorate with some parmesan flakes. Nice with chicken/fish and a glass of white.

Lotta's brussel sprouts with parmesan


Wash brussel sprouts and remove any bad parts. Now cut the sprouts in half and put them on an olive-oiled baking sheet. Add some black pepper, salt and a lot of parmesan flakes and turn the sprouts a bit. Bake for about 10-15 min at 200c. Suits as a side dish, for example with fish. Tip: put some butter on top to melt! You can also decorate with some fresh parmesan flakes.
